Keto Flourless Tahini Pancakes With Sugar-Free Golden Syrup

If you like tahini, you will love this recipe! You don't need any flour, niether almond flour nor coconut flour. These pancakes are Keto-friendly, Gluten-free, Sugar-free, Low Carb, LCHF, Dairy-free, and rich in protein. Like all of my other recipes, they are both nutritious and delicious! Enjoy with the irrisitible golden syrup....

Ingredients
  

  • 2 Large Eggs ca. 120g
  • 120 g Tahini 120g 1/2 cup
  • 25 g Erythritol 2 tablespoons
  • 2 g Salt 1/4 teaspoon
  • 5 ml Unsweetened Vanilla Extract   1 teaspoon

Golden Syrup

  • 25 g Erythritol 2 tablespoons
  • 7 g Inulin 1 tablespoon

Instructions
 

  • Crack 2 large eggs into a large mixing bowl.
  • Add the tahini, erythritol, salt and unsweetened vanilla extract.
  • Whisk vigorously, until smooth. It will take only about 1 minute by hand. 
  • Heat up the non-stick pan over a medium high heat. 
  • Grease the pan with a little bit of butter or any other oil of your choice.
  • Pour a ladle of the batter into the hot pan.
  • Cook, until the bubbles appear and some of them start to pop.
  • Flip it over and cook the other side for about a minute.
  • Repeat the process until you finish all the batter. You will have 4-5 pancakes depending on the size. 
  • Now we can quickly make the golden syrup. In a small sauce pan, mix erythritol and Inulin.
  • Let it melt over a medium high heat, untouched. 
  • As soon as the mixutre starts to color lightly, turn the heat off. The syrup continues to cook from the heat of the pan, and darkens in color a little more. In case of too much browning, chill the bottom of the sauce pan in water to stop the cooking. 
  • Drizzle the hot golden syrup over the warm pancakes, with a piece of butter to taste. 
  • Enjoy!
