
Keto (Vegan) Granola Cookies

- Grinder or food processor
- Measuring cups or kitchen scale
Ingredients
- 135 g Nuts of choice 1 cup
- 100 g Erythritol 1/2 cup
- 45 g Coconut oil 3 tablespoons
- 60 ml Water 1/4 cup
- 45 g Desiccated coconuts 1/2 cup
- 40 g Pumpkin seeds 1/4 cup
- 40 g Sunflower seeds 1/4 cup
- 20 g Chia seeds 2 tablespoons or 1/8 cup
- 5 ml Unsweetened vanilla extract 1 teaspoon
- 2 g Salt 1/4 teaspoon
Instructions
- Preheat the oven to 160◦C/320◦F.
- Put all the ingredients into a grinder or a food processor.
- Grind for about a minute until all the ingredients come together.
- Check if there's no unmixed part.
- On a baking sheet, place a parchment paper.
- Shape the dough into 12 flat balls.
- Flatten the surface, the thinner the faster it will bake!
- Bake for 15-20 minutes or until golden brown.
- Let it completely cool and enjoy!
